We make this bar in our chocolate studio using the same hands-on method we use for all our bars. We start with organic cocoa nibs grown in Peru and Colombia, roasting and refining each batch by hand so the cocoa’s natural character comes through clean and balanced. Keeping the process simple lets us stay close to the chocolate and bring out its best qualities.
This bar is crafted with 70% dark chocolate using just a few ingredients: organic cocoa nibs, raw organic cane sugar, cocoa butter, and organic hojicha powder. Our hojicha comes from Kakegawa, Shizuoka, a region in Japan known for producing smooth, aromatic roasted green tea. We add the hojicha during refining so it blends evenly into the chocolate, giving the bar a steady roasted-tea note that complements the cocoa rather than overwhelming it.
